For this recipe, you can use whatever broth you’d like! I have gone with a kind of umami style broth. For those of you who don’t know, umami is the fifth taste after sour, sweet, salt and bitter. It is described as “savory deliciousness“.

Ingredients
1 tbsp sake
2 tbsp mirin
3 tbsp soy sauce
Salt to taste
7 oz dry soba noodles
Toppings
Sautéed spinach
Sautéed mushrooms
Soft boiled egg
Sauté your toppings and boil your egg. 7 minutes will give you the perfect soft boiled egg.
Cook soba noodles according to package directions. Place in desired serving bowls.
Boil your 3 cups of water. Add sake, mirin, soy sauce, and salt to taste. Voila! You have soup! Pour your hot soup over soba noodles. Top with spinach, mushrooms, and egg. Grub. ENJOY!!!
